Ingredients
- 300g lean diced beef
- 2 medium-sized red onions, diced
- 2 garlic cloves, crushed
- 4 carrots, chopped
- 2 celery sticks, chopped
- 1-2 tsps vegetable stock powder
- 600ml water
- 100g red lentils
- 1 x 400g can chopped tomatoes
- 1 tbsp chopped fresh tarragon
Cooking Instructions
- Heat a large non-stick saucepan and when it is very hot, add the beef and quickly brown on all sides.
- Add the onions, garlic, carrots and celery and cook for 2-3 minutes.
- Stir in the stock powder, pour in the water and add the lentils, tomatoes and tarragon and simmer gently for 35-40 minutes until the meat is tender.
- Serve with seasonal vegetables.
Tips
Make tarragon vinegar by putting fresh sprigs of tarragon in a sterilised bottle with some distilled white vinegar and steep for 3-14 days, according to taste.
