Ingredients
- 30g fresh basil leaves
- 1 garlic clove, crushed
- 1 tsp ground coriander
- 1 tsp vegetable stock powder
- 200g (dry weight) tagliatelle or pappardelle pasta
- 1 vegetable stock cube
- 2 tbsps 3% fat Greek yogurt
- salt and freshly ground black pepper
Cooking Instructions
- Place the basil leaves, garlic, coriander and stock powder in a liquidiser. Add just enough boiling water to form a paste, then blend.
- Cook the pasta in a pan of water with the stock cube.
- Drain the pasta well, then return it to the pan and add the basil sauce. Mix well, adding the yogurt and salt and pepper to taste, then serve in warm bowls.
Tips
Perk up a ready-made pasta sauce by adding 1-2 tbsps of torn basil leaves.
