Sweet and sour roast chicken

Ingredients

  • 1kg whole chicken, skin removed
  • 300ml apple & mango juice
  • 300ml tomato passata
  • 1 tsp liquid chicken stock
  • 2 garlic cloves, crushed
  • 1 tbsp balsamic vinegar
  • 1 red onion, finely chopped
  • 1 tbsp tomato puree
  • 2 tsps runny honey
  • salt and black pepper

Cooking Instructions

  1. Preheat the oven to 200C, 400F, Gas Mark 6.
  2. Mix together the marinade ingredients.
  3. Season the chicken with salt and black pepper and place in a shallow dish, Score the flesh with a sharp knife and pour over the marinade.
  4. Allow to marinade for 30 minutes. Cover with foil and bake in a pre heated oven for 60 minutes until cooked adding a little water around the chicken if required.
  5. Serve hot with potatoes and a selection of vegetables.
