Sweet and sour roast chicken

Ingredients
- 1kg whole chicken, skin removed
- 300ml apple & mango juice
- 300ml tomato passata
- 1 tsp liquid chicken stock
- 2 garlic cloves, crushed
- 1 tbsp balsamic vinegar
- 1 red onion, finely chopped
- 1 tbsp tomato puree
- 2 tsps runny honey
- salt and black pepper
Cooking Instructions
- Preheat the oven to 200C, 400F, Gas Mark 6.
- Mix together the marinade ingredients.
- Season the chicken with salt and black pepper and place in a shallow dish, Score the flesh with a sharp knife and pour over the marinade.
- Allow to marinade for 30 minutes. Cover with foil and bake in a pre heated oven for 60 minutes until cooked adding a little water around the chicken if required.
- Serve hot with potatoes and a selection of vegetables.
