Stir-fry chicken with Ginger

Ingredients
- 100g chicken breast (no skin), chopped into bite-sized pieces
- ½ garlic clove, crushed
- 1 chopped red or green pepper
- 1 celery stick, chopped
- ½ red onion, chopped
- 25g mushrooms
- 50g mange tout
- 1 tsp grated fresh ginger
- soy sauce to taste
- 1 tsp grated fresh coriander
Cooking Instructions
- Chop 100g chicken breast (no skin) into bite-sized pieces and dry-fry with ½ crushed garlic clove.
- When the chicken has changed colour and is almost cooked through, add 1 chopped red or green pepper, 1 chopped celery stick, ½ chopped red onion, 25g mushrooms and 50g mangetout and dry-fry quickly but do not overcook.
- Just before serving add 1 tsp grated fresh ginger, soy sauce to taste and 1 tsp grated fresh coriander and heat through.
