Stir-fry chicken with Ginger

Ingredients

  • 100g chicken breast (no skin), chopped into bite-sized pieces
  • ½ garlic clove, crushed
  • 1 chopped red or green pepper
  • 1 celery stick, chopped
  • ½ red onion, chopped
  • 25g mushrooms
  • 50g mange tout
  • 1 tsp grated fresh ginger
  • soy sauce to taste
  • 1 tsp grated fresh coriander

Cooking Instructions

  1. Chop 100g chicken breast (no skin) into bite-sized pieces and dry-fry with ½ crushed garlic clove.
  2. When the chicken has changed colour and is almost cooked through, add 1 chopped red or green pepper, 1 chopped celery stick, ½ chopped red onion, 25g mushrooms and 50g mangetout and dry-fry quickly but do not overcook.
  3. Just before serving add 1 tsp grated fresh ginger, soy sauce to taste and 1 tsp grated fresh coriander and heat through.
