Sticky Pork Chops

Dean's cranked up the barby on Quorn house lawn to make a gorgeous sticky tomato based marinade recipe perfect for any meat or fish but used here with juicy pork steaks. Honey, pineapple juice and white wine vinegar make this a delicious sweet and sour combo. 202 calories per serving.

Sticky pork chops

Ingredients

  • 4 lean pork chops
  • salt and freshly ground black pepper
  • For the sauce
  • 300ml pineapple juice
  • 300ml tomato passata
  • 1-2 tsps vegetable stock powder
  • 2 garlic cloves, crushed
  • 1 tbsp white wine vinegar
  • 4 spring onions, finely chopped
  • 1 tbsp tomato puree
  • 2 tsps runny honey
  • salt and freshly ground black pepper

Cooking Instructions

  1. Preheat the grill or a barbecue.
  2. Cut away any fat from around the outsides of the chops.
  3. Place the pineapple juice, passata, stock powder and garlic in a saucepan and bring to a gentle simmer.
  4. Add the remaining sauce ingredients and season with salt and black pepper, if required.
  5. Season the pork with salt and black pepper and place on the grill or barbecue for 2-3 minutes. Then, using a brush, baste the pork with the sauce and continue cooking for about 8 minutes each side, until the pork is fully cooked.
  6. Serve hot with 1 yellow Portion Pot (100g) mashed sweet potato per person and additional fresh vegetables.

Tips

Make several shallow cuts in each chop before cooking to allow the sauce to penetrate the meat.
