Sticky ginger and lemon chicken

Ingredients
- 1 tbsp runny honey
- 1 tbsp soy sauce
- 1 garlic clove, crushed
- ½ tsp chopped fresh ginger
- 1 tbsp tomato puree
- ½ tsp chopped fresh lemongrass
- 1 x 120g skinless chicken breast
- chives, to garnish
Cooking Instructions
- Preheat the oven to 200C, 400F, Gas Mark 6.
- Mix together the runny honey and soy sauce with the garlic, ginger and tomato puree. Add the lemongrass.
- Lightly score the chicken breast and pour the mixture over.
- Bake in the oven for 20 minutes until cooked through.
- Garnish with chives and serve on a bed of noodles.
