Ingredients
- 1 baking potato
- 1 tsp vegetable stock powder
- 1 clove garlic, chopped
- 1 tbsp fresh parsley, chopped
- 1 x rump steak (100g)
- sea salt and coarse black pepper
- 1 tomato, cut in half
Cooking Instructions
- Preheat the oven to 200C, 400F, Gas Mark 6.
- Cut the potatoes into thin chips and blanch in a pan of boiling water containing the stock for 5 minutes.
- Transfer to a non-stick baking tray and lightly spray with olive oil spray.
- Bake in a preheated oven for 15-20 minutes.
- Ten minutes before the chips are done preheat a non-stick griddle pan.
- Mix together the garlic and parsley and press into the outside of the steak, seasoning with salt and black pepper.
- Cook the steak for 4 minutes each side then remove from the pan and allow to rest for 1 minute while you cook the tomato in the same pan.
- Serve the steak with chips and top with the tomato.
Tips
Blanching the chips in vegetable stock adds flavour as well as helping them crisp up.
