Ingredients

  • 1 baking potato
  • 1 tsp vegetable stock powder
  • 1 clove garlic, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 x rump steak (100g)
  • sea salt and coarse black pepper
  • 1 tomato, cut in half

Cooking Instructions

  1. Preheat the oven to 200C, 400F, Gas Mark 6.
  2. Cut the potatoes into thin chips and blanch in a pan of boiling water containing the stock for 5 minutes.
  3. Transfer to a non-stick baking tray and lightly spray with olive oil spray.
  4. Bake in a preheated oven for 15-20 minutes.
  5. Ten minutes before the chips are done preheat a non-stick griddle pan.
  6. Mix together the garlic and parsley and press into the outside of the steak, seasoning with salt and black pepper.
  7. Cook the steak for 4 minutes each side then remove from the pan and allow to rest for 1 minute while you cook the tomato in the same pan.
  8. Serve the steak with chips and top with the tomato.

Tips

Blanching the chips in vegetable stock adds flavour as well as helping them crisp up.
