Ingredients
- 200g pasta shapes
- 1 vegetable stock cube
- 1 red onion, chopped
- 1 clove of garlic, crushed
- 1 x 400g can chopped tomatoes
- 200g shredded fresh spinach
- 100g Quark soft cheese
- salt and black pepper
Cooking Instructions
- Cook 200g pasta shapes in a large saucepan of boiling water with a vegetable stock cube.
- In a preheated non-stick pan, dry-fry 1 chopped red onion and 1 clove of crushed garlic until soft.
- Add 1 x 400g can chopped tomatoes and cook for a further 5 minutes.
- Drain the pasta thoroughly and return to the pan, then mix in 200g shredded fresh spinach and 100g Quark soft cheese and season with salt and black pepper.
- Arrange on warmed plates, then top with the tomato sauce.
