Ingredients

  • 200g pasta shapes
  • 1 vegetable stock cube
  • 1 red onion, chopped
  • 1 clove of garlic, crushed
  • 1 x 400g can chopped tomatoes
  • 200g shredded fresh spinach
  • 100g Quark soft cheese
  • salt and black pepper

Cooking Instructions

  1. Cook 200g pasta shapes in a large saucepan of boiling water with a vegetable stock cube.
  2. In a preheated non-stick pan, dry-fry 1 chopped red onion and 1 clove of crushed garlic until soft.
  3. Add 1 x 400g can chopped tomatoes and cook for a further 5 minutes.
  4. Drain the pasta thoroughly and return to the pan, then mix in 200g shredded fresh spinach and 100g Quark soft cheese and season with salt and black pepper.
  5. Arrange on warmed plates, then top with the tomato sauce.
