Spicy pork and pepper kebabs

Ingredients
- 400g lean pork tenderloin, diced
- 1 red pepper, deseeded and diced
- For the marinade
- 1 tbsp teriyaki sauce
- 1 tbsp runny honey
- 1 tbsp chilli sauce
- zest of ½ orange
Cooking Instructions
- Take 4 wooden skewers and thread alternate pieces of pork and red pepper on to each stick, then place in a shallow dish.
- Combine the marinade ingredients in a small bowl, then pour over the kebabs and leave to marinate for 10 minutes.
- Preheat a barbecue or grill.When the kebabs have had their marinating time, cook them for 20 minutes on the barbecue or under the grill, turning them frequently during cooking.
- Serve the kebabs with 1 red portion pot (107g cooked weight) couscous per person plus salad leaves.
Tips
Be careful not to add too much orange zest - it can be overpowering if used in excess.
