A simple tasty dish not just for the barbeque. The teriyaki sauce, honey and chilli marinade gives it a sticky sweet twist and only 157 calories per serving

Spicy pork and pepper kebabs

Ingredients

  • 400g lean pork tenderloin, diced
  • 1 red pepper, deseeded and diced
  • For the marinade
  • 1 tbsp teriyaki sauce
  • 1 tbsp runny honey
  • 1 tbsp chilli sauce
  • zest of ½ orange

Cooking Instructions

  1. Take 4 wooden skewers and thread alternate pieces of pork and red pepper on to each stick, then place in a shallow dish.
  2. Combine the marinade ingredients in a small bowl, then pour over the kebabs and leave to marinate for 10 minutes.
  3. Preheat a barbecue or grill.When the kebabs have had their marinating time, cook them for 20 minutes on the barbecue or under the grill, turning them frequently during cooking.
  4. Serve the kebabs with 1 red portion pot (107g cooked weight) couscous per person plus salad leaves.

Tips

Be careful not to add too much orange zest - it can be overpowering if used in excess.
