Ingredients
- 200g minced lamb
- 2 red onions, finely sliced
- 1 garlic clove, crushed
- 1 tsp vegetable bouillon stock powder
- 1 red pepper, deseeded and sliced
- 2 small courgettes, sliced into batons
- 100g pak choi, sliced
- 100g low-fat natural yogurt
- 8 corn tortillas
Cooking Instructions
- Preheat a non-stick frying pan and dry-fry 200g minced lamb until lightly browned.
- Pour into a sieve and remove any fat. Wipe out the pan with kitchen paper and add 2 finely sliced red onions, 1 crushed garlic clove and 1 tsp vegetable bouillon stock powder.
- Dry-fry for 2-3 minutes until soft. Add the lamb, 1 deseeded and sliced red pepper, 2 small courgettes sliced into batons and 100g sliced chestnut mushrooms mixing well.
- Simmer for 5 minutes then add 1 tbsp mint jelly and 200g sliced pak choi.
- Spread 100g low-fat natural yogurt on 8 corn tortillas and add the lamb and vegetable filling and roll up. Serve with a tossed mixed salad.
