Spicy lamb wraps

Ingredients

  • 200g minced lamb
  • 2 red onions, finely sliced
  • 1 garlic clove, crushed
  • 1 tsp vegetable bouillon stock powder
  • 1 red pepper, deseeded and sliced
  • 2 small courgettes, sliced into batons
  • 100g pak choi, sliced
  • 100g low-fat natural yogurt
  • 8 corn tortillas

Cooking Instructions

  1. Preheat a non-stick frying pan and dry-fry 200g minced lamb until lightly browned.
  2. Pour into a sieve and remove any fat. Wipe out the pan with kitchen paper and add 2 finely sliced red onions, 1 crushed garlic clove and 1 tsp vegetable bouillon stock powder.
  3. Dry-fry for 2-3 minutes until soft. Add the lamb, 1 deseeded and sliced red pepper, 2 small courgettes sliced into batons and 100g sliced chestnut mushrooms mixing well.
  4. Simmer for 5 minutes then add 1 tbsp mint jelly and 200g sliced pak choi.
  5. Spread 100g low-fat natural yogurt on 8 corn tortillas and add the lamb and vegetable filling and roll up. Serve with a tossed mixed salad.
