Spicy gammon in apple juice

Ingredients
- 1 x 400g piece gammon
- 1 x 3cm piece fresh ginger, sliced
- 2 garlic cloves, sliced
- 500ml apple juice
- 2 bay leaves
- 2 star anise
- 2 cloves
- 2 tbsps demerara sugar
Cooking Instructions
- Place the gammon in a saucepan, cover with the apple juice and top up with cold water - enough to just cover the joint. Add the ginger and garlic and heat until it reaches a gentle simmer, then leave to simmer for 1 hour.
- Preheat the oven to 200C, 400F, Gas Mark 6.
- Remove the gammon from the pan and place on a baking tray. Sprinkle the sugar over the gammon. Bake near the top of the oven for 15 minutes, taking care not to burn the sugar.
- Leave to rest for 10 minutes before carving. Serve hot or cold with 100g dry-roasted sweet potatoes per person and additional steamed vegetables.
Tips
For a sweeter flavour, allow the meat to sit in the apple juice overnight before cooking.
