Spicy Gammon cooked in Apple Juice

A lovely method for cooking a gammon meat joint with spices and apple juice. Simmering in apple juice keeps the meat sweet, juicy and succulent before finishing off in the oven with a sugar crust gives it crunchy sweet topping. 236 calories per serving and 3.2% fat.

Spicy gammon in apple juice

Ingredients

  • 1 x 400g piece gammon
  • 1 x 3cm piece fresh ginger, sliced
  • 2 garlic cloves, sliced
  • 500ml apple juice
  • 2 bay leaves
  • 2 star anise
  • 2 cloves
  • 2 tbsps demerara sugar

Cooking Instructions

  1. Place the gammon in a saucepan, cover with the apple juice and top up with cold water - enough to just cover the joint. Add the ginger and garlic and heat until it reaches a gentle simmer, then leave to simmer for 1 hour.
  2. Preheat the oven to 200C, 400F, Gas Mark 6.
  3. Remove the gammon from the pan and place on a baking tray. Sprinkle the sugar over the gammon. Bake near the top of the oven for 15 minutes, taking care not to burn the sugar.
  4. Leave to rest for 10 minutes before carving. Serve hot or cold with 100g dry-roasted sweet potatoes per person and additional steamed vegetables.

Tips

For a sweeter flavour, allow the meat to sit in the apple juice overnight before cooking.

I made this for my husband (I'm vegetarian) and he really enjoyed it. It is really easy to prepare and it does prevent the gammon from becoming dry. The scent of the cloves is lovely.
