Spicy chicken with sweet potatoes

Ingredients
- 1 red onion, sliced
- 1 garlic clove, crushed
- 2 skinless chicken breasts, cut into chunks
- 200g sweet potatoes, peeled and chopped
- 2 tsps medium curry powder
- 1 tsp vegetable stock powder
- 500g tomato passata
- salt and black pepper
Cooking Instructions
- Preheat a non-stick frying pan and dry-fry the onion and garlic until soft. Add the chicken and potatoes and continue cooking, turning the meat to seal on all sides.
- Sprinkle the curry powder and stock powder over and cook for 1 minute before gradually stirring in the passata. Season to taste with salt and black pepper.
- Bring the sauce to a gentle simmer and cook for 20 minutes until the sauce has thickened and the potatoes are cooked through.
- Serve with fresh vegetables.
Tips
Sweet potatoes can be peeled in advance as they do not disclour like regular potatoes.
