Ingredients

  • 50g chopped onion
  • 225g tin tomatoes
  • ¾ tsp mild chilli powder
  • ½ tbsp tomato puree
  • 25g wholemeal flour
  • 125ml beef flavour stock
  • ¼ tsp garlic granules
  • pinch of salt
  • 100g sliced courgettes
  • 175g sliced red and green peppers
  • 225g tin red kidney beans, washed and drained
  • 225g tin haricot beans
  • 100g sweetcorn

Cooking Instructions

  1. Dry-fry the onions in a non-stick frying pan until soft. Add tinned tomatoes and mild chilli powder, tomato puree and wholemeal flour and mix well.
  2. Gradually add the beef flavoured stock together with the garlic granules, salt, sliced courgettes and peppers.
  3. Add the drained beans and sweetcorn and bring to the boil.
  4. Cover and simmer for 10-12 minutes or until the vegetables are tender.
  5. Serve with mashed potato or boiled rice.
