Ingredients
- 50g chopped onion
- 225g tin tomatoes
- ¾ tsp mild chilli powder
- ½ tbsp tomato puree
- 25g wholemeal flour
- 125ml beef flavour stock
- ¼ tsp garlic granules
- pinch of salt
- 100g sliced courgettes
- 175g sliced red and green peppers
- 225g tin red kidney beans, washed and drained
- 225g tin haricot beans
- 100g sweetcorn
Cooking Instructions
- Dry-fry the onions in a non-stick frying pan until soft. Add tinned tomatoes and mild chilli powder, tomato puree and wholemeal flour and mix well.
- Gradually add the beef flavoured stock together with the garlic granules, salt, sliced courgettes and peppers.
- Add the drained beans and sweetcorn and bring to the boil.
- Cover and simmer for 10-12 minutes or until the vegetables are tender.
- Serve with mashed potato or boiled rice.
