Ingredients

  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 tbsp fresh thyme
  • 1 x 400g can haricot beans
  • 300ml (½ pint) chicken or vegetable stock
  • 2 tbsps tomato puree
  • 4 low-fat sausages (or Quorn sausages)
  • 2 small skinless duck breasts, fat removed and each breast cut into 2 pieces

Cooking Instructions

  1. Heat a large, non-stick pan and dry-fry the onion and garlic with the thyme until the onion is soft and lightly golden.
  2. Add the haricot beans, stock and tomato puree and simmer for 10 minutes, adding water if required.
  3. In a seperate, hot non-stick pan, dry-fry the sausages. When the sausages are almost cooked, add the duck and cook for 2-3 minutes on each side.
  4. Add the meat to the sauce and serve with additional vegetables.

Tips

Take care not to overcook the duck - it will only need 2-3 minutes on each side.
