Ingredients
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 tbsp fresh thyme
- 1 x 400g can haricot beans
- 300ml (½ pint) chicken or vegetable stock
- 2 tbsps tomato puree
- 4 low-fat sausages (or Quorn sausages)
- 2 small skinless duck breasts, fat removed and each breast cut into 2 pieces
Cooking Instructions
- Heat a large, non-stick pan and dry-fry the onion and garlic with the thyme until the onion is soft and lightly golden.
- Add the haricot beans, stock and tomato puree and simmer for 10 minutes, adding water if required.
- In a seperate, hot non-stick pan, dry-fry the sausages. When the sausages are almost cooked, add the duck and cook for 2-3 minutes on each side.
- Add the meat to the sauce and serve with additional vegetables.
Tips
Take care not to overcook the duck - it will only need 2-3 minutes on each side.
