Spanish Roast Cod

If you've only ever had cod deep fried in batter from the fish and chip shop then try this lovely Spanish recipe using smoked paprika and passata. Roast it in the oven for a fast, tasty and oh so low fat fish dish. 158 calories and only 0.5% fat.

Spanish roast cod

Ingredients

  • 450g thick cod fillet
  • 2 garlic cloves, crushed
  • 1 Spanish onion, sliced
  • 1 red pepper, deseeded and sliced
  • 1 tsp smoked paprika
  • 2 large tomatoes, peeled, deseeded and sliced
  • 300ml tomato passata
  • salt and freshly ground black pepper

Cooking Instructions

  1. Preheat the oven to 200C, 400F, Gas Mark 6.
  2. Cut the cod fillet into 4 equal-sized pieces and place in an ovenproof dish.
  3. Heat a non-stick pan, and dry-fry the garlic and onion for 2-3 minutes until soft. Add the red pepper, smoked paprika, tomatoes and passata and season with salt and black pepper.
  4. Spoon the sauce over the fish and bake, uncovered, in the oven for 10-15 minutes.
  5. Remove from the oven and allow to rest for 1 minute. Serve with baby new poatatoes (boiled in skins) and a selection of fresh vegetables.

Tips

You can substitute tinned chopped tomatoes for fresh and, for extra flavour, add 150ml of dry white wine.
