Ingredients
- 450g thick cod fillet
- 2 garlic cloves, crushed
- 1 Spanish onion, sliced
- 1 red pepper, deseeded and sliced
- 1 tsp smoked paprika
- 2 large tomatoes, peeled, deseeded and sliced
- 300ml tomato passata
- salt and freshly ground black pepper
Cooking Instructions
- Preheat the oven to 200C, 400F, Gas Mark 6.
- Cut the cod fillet into 4 equal-sized pieces and place in an ovenproof dish.
- Heat a non-stick pan, and dry-fry the garlic and onion for 2-3 minutes until soft. Add the red pepper, smoked paprika, tomatoes and passata and season with salt and black pepper.
- Spoon the sauce over the fish and bake, uncovered, in the oven for 10-15 minutes.
- Remove from the oven and allow to rest for 1 minute. Serve with baby new poatatoes (boiled in skins) and a selection of fresh vegetables.
Tips
You can substitute tinned chopped tomatoes for fresh and, for extra flavour, add 150ml of dry white wine.
