Singapore Noodles with Prawns

Ingredients

  • 110g fine noodles
  • 2 leeks, finely sliced
  • 2 garlic cloves, crushed
  • 1 red pepper, deseeded and finely sliced
  • 1 x 5cm piece lemongrass, finely chopped
  • 175g mangetout
  • 3 tbsps pineapple juice
  • 1 tbsp soy sauce
  • 225g peeled uncooked prawns
  • 225g beansprouts
  • salt and freshly ground black pepper

Cooking Instructions

  1. Cook the noodles in boiling water, then drain.
  2. Preheat a non-stick wok, then dry-fry the leeks and garlic until soft, Add the red pepper, lemongrass, mangetout, pineapple juice and soy sauce and toss well together. Stir in the prawns and cook until they change colour.
  3. Stir in the beansprouts and drained noodles and combine well. Serve hot.
  4. Serve with a crisp salad.
