Seared Tuna with Courgette and Onion

A meaty fish dish this seared tuna steak is packed with goodness and really easy to cook. The courgette and coriander seed topping also works well eaten cold as a salad. Only 159 calories per serving.

Seared tuna with courgette and onion

Ingredients

  • 4 x 100g tuna steaks, cut into slices
  • 200g courgettes, cut into batons
  • 1 onion, sliced
  • pinch of coriander seed
  • 1 tbsp cider vinegar
  • salt and freshly ground black pepper
  • 4 slices fresh lemon to garnish

Cooking Instructions

  1. Preheat a non-stick frying pan.
  2. Season the tuna with salt and black pepper. Add to the preheated pan and quickly sear on both sides for 1-2 minutes, then remove from the pan and set aside.
  3. Add the courgettes and onion to the pan, along with the coriander seed, and season with salt and black pepper. Cook for 1-2 minutes until lightly browned, then add the vinegar and stir well.
  4. Transfer the courgettes and onion to serving plates, top with the tuna steaks and garnish with the lemon slices.
  5. Serve with 150g boiled new potatoes (with skins) per person and unlimited other vegetables.
