Seared tuna with courgette and onion

Ingredients
- 4 x 100g tuna steaks, cut into slices
- 200g courgettes, cut into batons
- 1 onion, sliced
- pinch of coriander seed
- 1 tbsp cider vinegar
- salt and freshly ground black pepper
- 4 slices fresh lemon to garnish
Cooking Instructions
- Preheat a non-stick frying pan.
- Season the tuna with salt and black pepper. Add to the preheated pan and quickly sear on both sides for 1-2 minutes, then remove from the pan and set aside.
- Add the courgettes and onion to the pan, along with the coriander seed, and season with salt and black pepper. Cook for 1-2 minutes until lightly browned, then add the vinegar and stir well.
- Transfer the courgettes and onion to serving plates, top with the tuna steaks and garnish with the lemon slices.
- Serve with 150g boiled new potatoes (with skins) per person and unlimited other vegetables.
