Seafood with black rice noodles

Ingredients

  • 140g black rice noodles
  • 1 vegetable stock cube
  • 2 onions, finely chopped
  • 2 garlic cloves, crushed
  • 300ml prepared mixed seafood
  • 60ml rosé wine
  • 1 tsp vegetable stock powder
  • 2 tbsps 2% fat Greek yogurt
  • freshly ground black pepper, to taste
  • 1 tbsp chopped fresh parsley, to garnish

Cooking Instructions

  1. 1 Cook the rice noodles in a pan of boiling water with the vegetable stock cube.
  2. 2 Meanwhile, preheat a non-stick wok and dry-fry the chopped onions and crushed garlic over a medium heat for 2–3 minutes, seasoning well with black pepper.
  3. 3 Add the seafood and wine and heat for 1–2 minutes to reduce the wine, then remove the pan from the heat and stir in the stock powder and yogurt.
  4. 4 Drain the noodles and arrange on serving plates. Top with the seafood and garnish with parsley.
