Ingredients
- 140g black rice noodles
- 1 vegetable stock cube
- 2 onions, finely chopped
- 2 garlic cloves, crushed
- 300ml prepared mixed seafood
- 60ml rosé wine
- 1 tsp vegetable stock powder
- 2 tbsps 2% fat Greek yogurt
- freshly ground black pepper, to taste
- 1 tbsp chopped fresh parsley, to garnish
Cooking Instructions
- 1 Cook the rice noodles in a pan of boiling water with the vegetable stock cube.
- 2 Meanwhile, preheat a non-stick wok and dry-fry the chopped onions and crushed garlic over a medium heat for 2–3 minutes, seasoning well with black pepper.
- 3 Add the seafood and wine and heat for 1–2 minutes to reduce the wine, then remove the pan from the heat and stir in the stock powder and yogurt.
- 4 Drain the noodles and arrange on serving plates. Top with the seafood and garnish with parsley.
