Lime scampi with tartare sauce

Ingredients
- 4 slices multigrain bread, made into breadcrumbs
- 1 tsp fine lime zest
- 2 tbsps polenta flour
- 1 egg, beaten
- 20 large peeled raw prawns
- For the tarture sauce:
- 2 tbsps 3% fat natural yogurt
- 2 tbsps low-fat mayonnaise
- squeeze of lime juice
- 1 tbsp freshly chopped parsley
- 1 tbsp chopped capers
- salt and pepper, to taste
Cooking Instructions
- Preheat the oven to 200C, 400F, Gas Mark 6. Place the breadcrumbs on a baking tray and toast in the oven for 10 minutes, then remove and mix in the lemon zest and polenta flour.
- Meanwhile, place the beaten egg in a shallow dish. Rinse the prawns to remove any shell then dip into the egg and then the breadcrumbs and place on a baking tray. Bake in the oven for 10 minutes.
- Combine all the sauce ingredients together in a bowl. Serve the scampi with a tossed mixed salad, the tartare sauce and low-fat chips.
