Roasted Vegetable Sausages

This low-fat roast vegetable and sausage recipe is a really easy one pot recipe and makes a great family supper. Just bung it all in the dish, pop it on the oven and forget about it for 20 minutes. Use low-fat sausages to keep the fat and calories down. 208 calories 3.2% fat

Roasted vegetable sausages

Ingredients

  • 1 x 300g pack vegetarian sausages
  • 1 x 500g pack prepared roasting vegetables
  • 1 red onion, cut into wedges
  • 2 garlic cloves, sliced
  • 2 tbsps thick balsamic vinegar
  • salt and freshly ground black pepper
  • olive oil spray
  • fresh parsley, to garnish

Cooking Instructions

  1. Preheat the oven to 200C, 400F, Gas Mark 6.
  2. Place the sausages, roasting vegetables, onion wedges and garlic slices on a non-stick baking tray.
  3. Spray lightly with olive oil and season with salt and pepper, then cook in the oven for 15-20 minutes, until the sausages are brown and the vegetables are soft.
  4. Remove from the oven and slice the sausages into chunks. Divide the sausage and vegetables between 4 plates and drizzle with the balsamic vinegar.
  5. Garnish with fresh parsley and serve with 1 x 200g baked sweet potato per person.

Tips

To spice up the vegetables, sprinkle a pinch of dried chilli flakes over them before roasting.
