Roasted vegetable sausages

Ingredients
- 1 x 300g pack vegetarian sausages
- 1 x 500g pack prepared roasting vegetables
- 1 red onion, cut into wedges
- 2 garlic cloves, sliced
- 2 tbsps thick balsamic vinegar
- salt and freshly ground black pepper
- olive oil spray
- fresh parsley, to garnish
Cooking Instructions
- Preheat the oven to 200C, 400F, Gas Mark 6.
- Place the sausages, roasting vegetables, onion wedges and garlic slices on a non-stick baking tray.
- Spray lightly with olive oil and season with salt and pepper, then cook in the oven for 15-20 minutes, until the sausages are brown and the vegetables are soft.
- Remove from the oven and slice the sausages into chunks. Divide the sausage and vegetables between 4 plates and drizzle with the balsamic vinegar.
- Garnish with fresh parsley and serve with 1 x 200g baked sweet potato per person.
Tips
To spice up the vegetables, sprinkle a pinch of dried chilli flakes over them before roasting.
