Roasted cod with mushrooms

Ingredients
- 1 thick cod fillet (approx 120g). skinned
- 2 spring onions, finely chopped
- 1 baby courgette, diced
- 50g chestnut mushrooms, sliced
- 2 cherry tomatoes, cut in half
- 1 tbsp chopped fresh basil
- juice of ½ lemon
- salt and freshly ground black pepper
Cooking Instructions
- Preheat the oven to 200C, 400F, Gas Mark 6.
- Season the fish on both sides and place, skin-side down, on a non-stick baking tray.
- Heat a non-stick pan and dry-fry the spring onions, courgette, mushrooms and tomatoes, cooking briskly for 4-5 minutes. Add the basil and lemon juice and season with salt and black pepper.
- Spoon onto the cod steak and place uncovered in the hot oven for 12-15 minutes or until the cod is just cooked. (When just cooked, the cod should flake easily when teased with a fork.)
- Serve with 1 red portion pot (250g) mashed sweet potato, plus seasonal vegetables or salad.
