Roasted cod with mushrooms

Ingredients

  • 1 thick cod fillet (approx 120g). skinned
  • 2 spring onions, finely chopped
  • 1 baby courgette, diced
  • 50g chestnut mushrooms, sliced
  • 2 cherry tomatoes, cut in half
  • 1 tbsp chopped fresh basil
  • juice of ½ lemon
  • salt and freshly ground black pepper

Cooking Instructions

  1. Preheat the oven to 200C, 400F, Gas Mark 6.
  2. Season the fish on both sides and place, skin-side down, on a non-stick baking tray.
  3. Heat a non-stick pan and dry-fry the spring onions, courgette, mushrooms and tomatoes, cooking briskly for 4-5 minutes. Add the basil and lemon juice and season with salt and black pepper.
  4. Spoon onto the cod steak and place uncovered in the hot oven for 12-15 minutes or until the cod is just cooked. (When just cooked, the cod should flake easily when teased with a fork.)
  5. Serve with 1 red portion pot (250g) mashed sweet potato, plus seasonal vegetables or salad.
