Prawn Madras

With a fondness for ghee, Indian recipes can sometimes be very high in fat. This low fat prawn madras recipe made the Rosemary Conley way is a great way to get your curry fix without the unwanted fat and calories and at only 0.6% fat prawns make a great choice for dieters. Without the rice, this dish comes in at only 86 calories and 0.5% fat.

Prawn madras

Ingredients

  • 2 red onions, finely chopped
  • 2 garlic cloves, crushed
  • 2 tsps freshly chopped ginger
  • 1 tsp of each ground turmeric, curry powder, ground cumin, Garam Masala
  • 1 small red chilli, chopped
  • 1 400g can chopped tomatoes
  • 3 curry leaves
  • 200g raw fresh peeled prawns
  • salt and black pepper

Cooking Instructions

  1. Dry-fry the onion and garlic in a non-stick pan until soft and starting to colour.
  2. Add all the spices and continue to cook for 1-2 minutes before adding the chilli, tomatoes and curry leaves.
  3. Add 100ml water and simmer for 10 minutes to allow the sauce to thicken, seasoning with salt and black pepper.
  4. Just before serving add the prawns and stir allowing the prawns to cook for 2 minutes.
  5. Serve with rice and naan bread.

I thought this recipe was great although next time I will only use one onion as found two was just too much (for my taste anyway). Definitely one of my favourites and can't believe how low in calories it is!

I could taste this as Dean was making it and I will definitely be making this for tea tomorrow as i already have everythingin.... bar the curry leaves. Hopefully this will not make too much of a difference. Must dash to get the prawns out of the freezer for tomorrow :D

I made this for myself anf my husband and we both thought it was delicious. The recipe was so quick and easy to make after a full day at work it was lovely to come home and cook something that was so tasty and so quick to make but low in fat. My husband likes quite a spicey curry so I put extra chilli in for a little extra kick! I'll definintely make this again and I think this would also be nice with chicken or monk fish.
