Pork and red pepper burgers

Ingredients

  • 400g lean pork, minced
  • 1 red pepper, deseeded and finely diced
  • 1 tsp vegetable stock powder
  • 2 garlic cloves, crushed
  • 1 tbsp chopped fresh mixed herbs
  • freshly ground black pepper

Cooking Instructions

  1. Preheat the grill to high.
  2. Place all the ingredients together in a mixing bowl and season with black pepper. Divide the mixture into 4 and mould into burger shapes, squashing each one flat with your hands.
  3. Cook the burgers under the grill for 10-15 minutes, turning them regularly. To test if they are cooked, insert a knife into the centre of one of the burgers, if the juices run clear and the flesh is not pink, they are ready.
  4. Serve wach burger with 1 x 200g baked sweet potato and 1 blue Portion Pot (75g) tomato salsa per person, plus a large salad.

Tips

As a variation, you can substitute minced chicken ot turkey for the pork.
