Ingredients
- 500g piece lean pork fillet
- salt and freshly ground black pepper
- For the salsa verde:
- 4 spring onions, chopped
- 2 garlic cloves, crushed
- 50g mangetout, chopped
- 1 eating apple, diced
- 1 tbsp lime juice
- 2 tsps mint jelly
Cooking Instructions
- Preheat a non-stick frying pan.
- Season the meat with salt and pepper. Add to the pan and seal on all sides. Continue cooking, turning it regularly for 15 minutes depending on the thickness of the fillet. Remove the meat from the pan and cover it to keep it warm, while you make the salsa
- Mix the ingredients for the salsa verde together in a bowl.
- Carve the pork into thin slices and top with the salsa verde, Serve with 150g boiled new potatoes (with skins) per person and unlimited additional vegetables or salad.
Tips
Let the meat rest for 5 minutes before slicing, to allow it to tenderise.
