Pomegranate Pork Slices

A superfood sauce to serve over any meat or fish but used here with succulent pork slices, pomegranates add an unusual twist to this tangy easy to prepare recipe. 198 calories per serving.

Pomegranate pork slices

Ingredients

  • 4 x 100g lean pork slices
  • For the sauce
  • 300ml pomegranate juice
  • 300ml tomato passata
  • 1 tsp vegetable bouillon stock powder
  • 2 garlic cloves, crushed
  • 1 tbsp red wine vinegar
  • 1 tbsp tomato puree
  • 2 tsps runny honey
  • salt and freshly ground black pepper

Cooking Instructions

  1. Place the pomegranate juice, tomato passata, bouillon powder and garlic into a saucepan and bring to a gentle boil.
  2. Add the red wine vinegar, tomato puree and the honey and season with salt and black pepper.
  3. Season the pork slices with salt and pepper and place under a preheated conventional grill for 2-3 minutes each side or in a preheated health grill for 2-3 minutes.
  4. Using a brush, baste the slices with the sauce and continue cooking until cooked through.
  5. Serve hot with boiled new potatoes (with skins), a selection of other vegetables and the remaining sauce.

Tips

Make several shallow cuts in each pork slice before cooking to allow the sauce to penetrate the meat.
