Ingredients
- 4 x 100g lean pork slices
- For the sauce
- 300ml pomegranate juice
- 300ml tomato passata
- 1 tsp vegetable bouillon stock powder
- 2 garlic cloves, crushed
- 1 tbsp red wine vinegar
- 1 tbsp tomato puree
- 2 tsps runny honey
- salt and freshly ground black pepper
Cooking Instructions
- Place the pomegranate juice, tomato passata, bouillon powder and garlic into a saucepan and bring to a gentle boil.
- Add the red wine vinegar, tomato puree and the honey and season with salt and black pepper.
- Season the pork slices with salt and pepper and place under a preheated conventional grill for 2-3 minutes each side or in a preheated health grill for 2-3 minutes.
- Using a brush, baste the slices with the sauce and continue cooking until cooked through.
- Serve hot with boiled new potatoes (with skins), a selection of other vegetables and the remaining sauce.
Tips
Make several shallow cuts in each pork slice before cooking to allow the sauce to penetrate the meat.
