Poached Egg Florentine

A low fat version of this classic dish poached egg Florentine. The creamy cheese sauce uses low fat Philadelphia in place of full fat cheese to keep the fat and calories to a minimum. 249 per serving.

Poached egg florentine

Ingredients

  • 1 egg
  • 300ml water
  • 1 tsp cider vinegar
  • pinch of salt
  • 200g fresh leaf spinach
  • 100g low-fat soft Cheese
  • 1 tbsp semi-skimmed milk
  • salt and black pepper

Cooking Instructions

  1. Break 1 egg into a cup. Bring 300ml water to the boil in a saucepan, adding 1 tsp cider vinegar and a pinch of salt. Tip the pan to one side, allowing the water to roll over in the pan, then gently drop the egg into the water and cook for 2 minutes.
  2. Meanwhile, add 200g fresh leaf spinach to a preheated non-stick pan and pour 1 tsp of boiling water from the egg pan over to wilt the spinach, then transfer to a serving plate.
  3. Add 100g low-fat soft Cheese and 1 tbsp semi-skimmed milk to this pan and heat through, stiriing well to make a sauce.
  4. Lift the egg out of its pan, using a slotted spoon, and sit it on top of the spinach. Top with the cheese sauce and season with salt and black pepper.

I've always used a poacher when making a poached egg, but that way looks really good!
