Ingredients
- 1 egg
- 300ml water
- 1 tsp cider vinegar
- pinch of salt
- 200g fresh leaf spinach
- 100g low-fat soft Cheese
- 1 tbsp semi-skimmed milk
- salt and black pepper
Cooking Instructions
- Break 1 egg into a cup. Bring 300ml water to the boil in a saucepan, adding 1 tsp cider vinegar and a pinch of salt. Tip the pan to one side, allowing the water to roll over in the pan, then gently drop the egg into the water and cook for 2 minutes.
- Meanwhile, add 200g fresh leaf spinach to a preheated non-stick pan and pour 1 tsp of boiling water from the egg pan over to wilt the spinach, then transfer to a serving plate.
- Add 100g low-fat soft Cheese and 1 tbsp semi-skimmed milk to this pan and heat through, stiriing well to make a sauce.
- Lift the egg out of its pan, using a slotted spoon, and sit it on top of the spinach. Top with the cheese sauce and season with salt and black pepper.
