Ingredients

  • 1 red onion, diced
  • 1 eating apple, peeled, cored and sliced
  • 4 lean pork slices
  • 1 tsp ground coriander
  • 1 tsp smoked paprika (optional)
  • 1 tsp vegetable stock powder
  • 1 tsp cracked black pepper
  • juice of 1 lime
  • 4 tbsps 3% fat yogurt

Cooking Instructions

  1. Heat a non-stick pan and dry-fry the onion and apple until soft.
  2. Add the pork and cook until it starts to colour, then add the remaining ingredients except the lime and yogurt and turn well to ensure the pork browns on all sides.
  3. When the pork is cooked through, add the lime juice, then remove the pan from the heat and stir in the yogurt.
  4. Serve on a bed of fresh vegetables.

Tips

Rub the spices into the pork before cooking to add flavour. For fussy eaters just leave the paprika out of this recipe.
