Parsley and lemon lamb steaks

Ingredients
- 4 lean lamb leg steaks, 300g total
- 4 tbsps chopped fresh parsley
- 2 garlic cloves, crushed
- zest of ½ lemon
- 1 tbsp capers, chopped
- 2 tbsps mint jelly
- salt and freshly ground black pepper
Cooking Instructions
- Cut away the fat from the lamb. Place the steaks in a shallow container and season with salt and black pepper.
- Combine the remaining ingredients together in a small bowl and mix well. Spread over the lamb, then turn the steaks over to coat both sides.
- Preheat the grill to high. Place the steaks on a wire rack and cook under the grill for 8-10 minutes on each side. Serve with boiled poatatoes and a selection of fresh vegetables.
