Parsley and lemon lamb steaks

Ingredients

  • 4 lean lamb leg steaks, 300g total
  • 4 tbsps chopped fresh parsley
  • 2 garlic cloves, crushed
  • zest of ½ lemon
  • 1 tbsp capers, chopped
  • 2 tbsps mint jelly
  • salt and freshly ground black pepper

Cooking Instructions

  1. Cut away the fat from the lamb. Place the steaks in a shallow container and season with salt and black pepper.
  2. Combine the remaining ingredients together in a small bowl and mix well. Spread over the lamb, then turn the steaks over to coat both sides.
  3. Preheat the grill to high. Place the steaks on a wire rack and cook under the grill for 8-10 minutes on each side. Serve with boiled poatatoes and a selection of fresh vegetables.
