Ingredients
- 225g pasta shapes
- 1 vegetable stock cube
- 4 slices pancetta, cut into strips
- 1 small red onion, finely chopped
- 1 garlic clove, crushed
- 2 baby courgettes, finely diced
- pinch of cayenne pepper
- 1 x 400g can chopped tomatoes
- 225g fresh spinach, shredded
- 2 tbsps chopped fresh chives
Cooking Instructions
- Cook the pasta in a large saucepan of boiling water containing the vegetable stock cube.
- Meanwhile, preheat a non-stick pan. Add the pancetta, onion and garlic and dry-fry until soft. Add the courgettes and cook for a further 2-3 minutes. Then stir in the cayenne pepper and tomatoes and simmer gently for 5-6 minutes.
- Drain the pasta thoroughly and arrange on warmed plates.
- Mix the spinach into the sauce, Spoon the sauce over the pasta and garnish with the chives. Serve with a large mixed green salad tossed in oil-free dressing.
Tips
You can also use this sauce to accompany grilled meat and fish or as a tasty toast topper.
