Ingredients

  • 2 whole sea bream based on 200g each fish
  • 2 sheets of newspaper
  • selection of fresh herbs, parsley, lemon balm, celery tops
  • 1 lemon
  • salt and cracked black pepper

Cooking Instructions

  1. 1 Wash the fish well and season both sides with salt and black pepper before placing each fish near the corner of each newspaper sheet. Place slices of lemon on each fish and cover with a sprig of 3 different fresh herbs.
  2. Roll up into a parcel making sure the fish are completely covered in the paper and wet under a cold tap until soaked.
  3. 2 Place directly on the BBQ and cook for 20 minutes turning and spraying with water regularly. Test if cooked by unwrapping and pulling at the fins at the back of the fish – they should come away easily.
  4. Serve whole or fillet before serving.

Tips

Cooking fish in paper or foil is easy and helps keep the barbecue clean so it’s ready to cook other foods. Spray the paper with water during cooking to prevent it catching light.
