Ingredients
- 1 egg, beaten
- 100g plain flour
- 100ml milk
- 1 red onion, diced
- 400g lean minced beef
- 2 carrots, grated
- pinch fresh thyme
- 100g chopped mushrooms
- 1 tbsp gravy granules
- salt and black pepper
Cooking Instructions
- Preheat the oven to 200C, 400F, Gas Mark 6.
- Make up the Yorkshire pudding batter by mixing the egg into the flour with a wooden spoon, add sufficient milk to form a paste.
- Change the spoon for a whisk and stir in the remaining milk to form a smooth batter, until it is the consistency of double cream. Pour into a four-hole mould and bake in the oven for 30 minutes until well risen.
- Meanwhile dry-fry the onion in a non-stick pan until soft, add the beef and continue to cook sealing the beef. Add the remaining ingredients with 500ml water, stirring well.
- Simmer gently for 30 minutes until the mince is tender and the gravy thickened.
- When cooked remove the Yorkshires from the oven. Serve the beef inside the yorkshire puddings with additional vegetables.
Tips
Serve this mince as a meaty soup by adding a selection of frozen vegetables and top up with more stock.
