Ingredients
- 200g gluten free penne pasta
- 1 tsp bouillon stock powder
- 2 red onions, chopped
- 2 garlic cloves, crushed
- 2 courgettes, chopped
- 1 red pepper, deseeded and chopped
- 1 x 400g can chopped tomatoes
- 250g tomato passata
- bunch fresh basil
- 30g Rosemary Conley low fat Mature Cheese
- salt and black pepper
Cooking Instructions
- Preheat the oven to 200C, 400F, Gas Mark 6.
- Cook the pasta according to packet instructions in a pan of boiling water containing the stock powder. Meanwhile dry fry the onion and garlic in a non-stick frying pan.
- Add the pepper and courgette and cook for a further 2 minutes. Add the tinned tomatoes and passata and simmer. Strain the pasta well and pour into the sauce. Stir well the pour into an ovenproof dish and top with freshly chopped basil and grated cheese.
- Bake in a preheated oven for 15 minutes until lightly browned. Serve with a tossed mixed salad.
Tips
Add cheese on top of the pasta dishes to make it feel more indulgent.
