Mango stir-fried pork

Ingredients
- 2 tbsps dry sherry
- zest and juice of 1 lime
- 450g lean pork tenderloin, thinly sliced
- 1 x 2cm piece fresh ginger, peeled and finely grated
- 2 tbsps runny honey
- 2 tbsps mango chutney
- 1 small red chilli, sliced
- 2 garlic cloves, crushed
- 1 tbsp tomato puree
- 115g pak choi or dark cabbage
- salt and freshly ground black pepper
Cooking Instructions
- Mix together the sherry and lime. Place the pork in a shallow dish, season with salt and black pepper and pour the sherry and lime over. Leave to marinate for 10 minutes.
- Mix together the ginger, honey, chutney, chilli, garlic and tomato puree and spread over the pork.
- Preheat a non-stick wok. Add the pork and cook over a high heat for 6-8 minutes on each side until cooked.
- Shred the pak choi or cabbage, add to the pan and cook for a further minute.
- Serve on a bed of bean sprouts, rice or noodles.
Tips
For added flavour, marinate the meat in the sherry and lime overnight.
