Ingredients

  • 2 x 150g skinless chicken breasts
  • 2 tsps lime pickle
  • 500g pack stir-fry vegetables
  • 2 tsps soy sauce
  • juice of ½ lime

Cooking Instructions

  1. Cut the chicken into bite-sized pieces and place in a bowl. Add the lime pickle and toss to coat.
  2. Preheat a non-stick wok until hot. Add the chicken and cook for 3-4 minutes, moving it around the pan. Add the vegetables and soy sauce and continue cooking for 2-3 minutes until the vegetables are hot.
  3. Add the lime juice and serve straight away with either boiled rice or noodles, as well as a salad of your choice.

Tips

Cook the chicken over a high heat, moving it around the pan to ensure it gets cooked right through.
