Lemon & ginger marinated chicken

Ingredients
- 4 fresh skinless chicken breasts
- 2 cloves garlic, crushed
- 1 tbsp curry powder
- 2 tsps ground coriander
- 1 tsp chopped fresh ginger
- zest of ½ lemon
- 300ml 3% fat Greek yogurt
- salt and freshly ground black pepper
Cooking Instructions
- Slice the chicken breasts in half, to give 8 thin pieces of chicken.
- Mix the spices with the garlic, lemon zest and yogurt and place in a shallow dish. Press the chicken into the mixture, coating on all sides. Leave to marinate for 30 minutes.
- Meanwhile, preheat the oven to 200C, 400F, Gas Mark 6 or preheat a barbecue.
- When the chicken has marinated, transfer it to a non-stick baking tray and place in the hot oven or over the barbecue and cook for 20 minutes, until fully cooked through.
- Serve hot or cold with a mixed salad.
Tips
Be careful not to add too much lemon zest - it can be overpowering if used in excess.
