Lemon and Ginger Marinated Chicken

A lovely tangy yoghurt based marinade perfect for any meat or fish but used here on butterfly cuts of chicken breast. Coriander, garlic and curry powder add to the sublime flavour combinations. 184 calories per serving. Viewer beware: the chef is in shorts!

Lemon & ginger marinated chicken

Ingredients

  • 4 fresh skinless chicken breasts
  • 2 cloves garlic, crushed
  • 1 tbsp curry powder
  • 2 tsps ground coriander
  • 1 tsp chopped fresh ginger
  • zest of ½ lemon
  • 300ml 3% fat Greek yogurt
  • salt and freshly ground black pepper

Cooking Instructions

  1. Slice the chicken breasts in half, to give 8 thin pieces of chicken.
  2. Mix the spices with the garlic, lemon zest and yogurt and place in a shallow dish. Press the chicken into the mixture, coating on all sides. Leave to marinate for 30 minutes.
  3. Meanwhile, preheat the oven to 200C, 400F, Gas Mark 6 or preheat a barbecue.
  4. When the chicken has marinated, transfer it to a non-stick baking tray and place in the hot oven or over the barbecue and cook for 20 minutes, until fully cooked through.
  5. Serve hot or cold with a mixed salad.

Tips

Be careful not to add too much lemon zest - it can be overpowering if used in excess.
