Lemon chicken stir-fry with noodles

Ingredients
- 3 skinless chicken breasts, cut into chunks
- zest and juice of 1 lemon
- 110g fine noodles
- 2 red onions, finely sliced
- 2 garlic cloves, crushed
- 1 red pepper, deseeded and finely sliced
- 1 x 4cm piece lemongrass, finely chopped
- 150g mangetout
- 1 tbsp soy sauce
- 225g beansprouts
- salt and freshly ground black pepper
Cooking Instructions
- Place the chicken chunks in a shallow dish, pour the lemon zest and juice over, then cover and leave to marinate for 20 minutes.
- Cook the noodles in boiling water.
- Meanwhile, preheat a non-stick wok. Add the chicken and brown on all sides, then season with salt and black pepper. Add the onions and garlic and cook for 1-2 minutes. Stir in the red pepper, lemongrass, mangetout and soy sauce and toss well.
- Drain the noodles and mix with the beansprouts.
- Combine the chicken and vegetables with the beansprouts and noodles and serve with green salad.
