Lemon Breaded Plaice with Tartare Sauce

Ingredients

  • 4 slices multigrain bread, made into breadcrumbs
  • 1 tsp fine lemon zest
  • 1 egg
  • 4 fillets plaice
  • salt and freshly ground black pepper to taste
  • For the tartare sauce
  • 2 tbsps 3% fat natural yogurt
  • 2 tbsps low-fat Mayonnaise (under 5% fat)
  • squeeze of lemon juice
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped capers

Cooking Instructions

  1. Preheat the oven to 200C, 400F, Gas Mark 6.
  2. Put the breadcrumbs on a non-stick baking tray and toast in the oven for 10 minutes, then remove to a bowl and mix in the lemon zest.
  3. Beat the egg in a shallow dish. Season the fish fillets on both sides with salt and pepper, then dip them, one at a time, into the egg and then the breadcrumbs, until well coated.
  4. Place on a non-stick baking tray and bake in the centre of the oven for 15-20 minutes.
  5. Combine all the sauce ingredients in a bowl and serve alongside the fish with some boiled new potatoes and garden peas.
