Lemon breaded plaice with tartare sauce

Ingredients
- 4 slices multigrain bread, made into breadcrumbs
- 1 tsp fine lemon zest
- 1 egg
- 4 fillets plaice
- salt and freshly ground black pepper to taste
- For the tartare sauce
- 2 tbsps 3% fat natural yogurt
- 2 tbsps low-fat Mayonnaise (under 5% fat)
- squeeze of lemon juice
- 1 tbsp chopped fresh parsley
- 1 tbsp chopped capers
Cooking Instructions
- Preheat the oven to 200C, 400F, Gas Mark 6.
- Put the breadcrumbs on a non-stick baking tray and toast in the oven for 10 minutes, then remove to a bowl and mix in the lemon zest.
- Beat the egg in a shallow dish. Season the fish fillets on both sides with salt and pepper, then dip them, one at a time, into the egg and then the breadcrumbs, until well coated.
- Place on a non-stick baking tray and bake in the centre of the oven for 15-20 minutes.
- Combine all the sauce ingredients in a bowl and serve alongside the fish with some boiled new potatoes and garden peas.
