Ingredients
- 1 red onion, diced
- 2 garlic cloves, crushed
- 300g lean diced lamb
- salt and black pepper
- 2cm piece fresh ginger, peeled and finely chopped
- 2 tsps garam masala
- 1 tbsp medium curry powder
- 1 green pepper, diced
- 1 small chilli, chopped
- 1 lamb stock cube
- 1 x 400g can chopped tomatoes
- fresh coriander, to garnish
Cooking Instructions
- Preheat a non-stick pan. Dry-fry 1 diced red onion and 2 crushed garlic cloves until the onion is lightly browned.
- Add 300g lean diced lamb and cook until sealed seasoning with salt and black pepper.
- Add 2cm piece fresh ginger (peeled and finely chopped), 2 tsps garam masala, 1 tbsp medium curry powder, 1 diced green pepper and 1 chopped small chilli and cook mixing well before adding a lamb stock cube and 400g can chopped tomatoes.
- Cover and simmer for 30-35 minutes until the lamb is tender and the sauce reduced.
- Serve with rice garnished with fresh coriander.
Tips
Ensure you cook out the spices for a mellow flavoured curry.
