Ingredients
- 4 skinless chicken breasts
- zest and juice of an orange
- 2 tbsps tomato puree
- 2 cloves garlic, crushed
- 1 red pepper, finely diced
- 2 tsps Cider vinegar
- 1 tbsp Jerk seasoning
- salt and black pepper
- freshly chopped chives, to serve
Cooking Instructions
- Preheat the oven to 200C, 400F, Gas Mark 6 or preheat a barbecue.
- Place the chicken breasts in an ovenproof dish. Season with salt and black pepper. Mix together the sauce ingredients and pour over the chicken.
- Bake in the oven or cook on the barbecue for 25-30 minutes until fully cooked.
- Serve with rice or potatoes and additional vegetables.

Serve this chicken dish cold with salad as a tasty lunch dish.
