Jerk orange chicken

Ingredients

  • 4 skinless chicken breasts
  • zest and juice of an orange
  • 2 tbsps tomato puree
  • 2 cloves garlic, crushed
  • 1 red pepper, finely diced
  • 2 tsps Cider vinegar
  • 1 tbsp Jerk seasoning
  • salt and black pepper
  • freshly chopped chives, to serve

Cooking Instructions

  1. Preheat the oven to 200C, 400F, Gas Mark 6 or preheat a barbecue.
  2. Place the chicken breasts in an ovenproof dish. Season with salt and black pepper. Mix together the sauce ingredients and pour over the chicken.
  3. Bake in the oven or cook on the barbecue for 25-30 minutes until fully cooked.
  4. Serve with rice or potatoes and additional vegetables.
