Honey and mustard chicken

Ingredients
- 2 x 150g skinless chicken breasts
- 2 tbsps soft set honey
- 2 tbsps grain mustard
- 1 tbsp white balsamic dressing or white wine vinegar
- salt and freshly ground black pepper
- chopped fresh chives, to garnish
Cooking Instructions
- Preheat the oven to 200C, 400F, Gas Mark 6.
- Using a sharp knife, make several incisions along the top of each chicken breast and season with salt and black pepper.
- Mix together the honey, mustard and balsamic dressing or vinegar and pour over the chicken breasts.
- Place the chicken on a non-stick baking tray and cook in the centre of the oven for 25-30 minutes, until cooked through.
- Transfer to serving plates, sprinkle with chives and serve with 115g boiled new potatoes per person and a mixed salad.
Tips
This chicken dish tastes good served hot or cold.
