Honey and mustard chicken

Ingredients

  • 2 x 150g skinless chicken breasts
  • 2 tbsps soft set honey
  • 2 tbsps grain mustard
  • 1 tbsp white balsamic dressing or white wine vinegar
  • salt and freshly ground black pepper
  • chopped fresh chives, to garnish

Cooking Instructions

  1. Preheat the oven to 200C, 400F, Gas Mark 6.
  2. Using a sharp knife, make several incisions along the top of each chicken breast and season with salt and black pepper.
  3. Mix together the honey, mustard and balsamic dressing or vinegar and pour over the chicken breasts.
  4. Place the chicken on a non-stick baking tray and cook in the centre of the oven for 25-30 minutes, until cooked through.
  5. Transfer to serving plates, sprinkle with chives and serve with 115g boiled new potatoes per person and a mixed salad.

Tips

This chicken dish tastes good served hot or cold.
