Green Pea, Mint and Cheese Pasta

This is a really simple low-fat sauce for pasta that couldn't be easier to make. The extra light Philadelphia cream cheese combined with the garlic and mint gives the whole dish a really fresh and light flavour while the marriage of al dente pasta and the sweetness of the peas is a fantastic combination. Ingredients

  • 200g pasta shapes
  • 1 vegetable stock cube
  • 2 garlic cloves, crushed
  • 4 baby leeks, finely sliced
  • 100g fresh or frozen peas
  • 200g low-fat soft cheese
  • 1-2 tbsps semi-skimmed milk
  • 1 tbsp fresh mint
  • fresh basil to garnish

Cooking Instructions

  1. Cook the pasta in a large saucepan of boiling water with the stock cube.
  2. Meanwhile, heat a non-stick pan, and dry-fry the garlic and leeks until soft.
  3. Add the peas to the pan and just enough water to allow them to cook. Bring to a gentle simmer and simmer until the peas are cooked.
  4. Stir in the cheese and the milk and, just before serving, stir in the mint.
  5. Drain the pasta thoroughly, arrange on warmed plates and pour the sauce over it. Garnish with the fresh basil and serve with a mixed salad.

Tips

To spice up the sauce, add a pinch of dried chilli flakes.
