Turkey and asparagus pasta

Ingredients
- 2 x yellow Portion Pots Doves Gluten Free Penne pasta (90g)
- 1 long shallot, thinly sliced
- 6 asparagus spears, chopped
- 100g turkey steak, thinly sliced
- 1 clove garlic, crushed
- 250g tomato passata
- 2 tsps red currant jelly
Cooking Instructions
- Cook the pasta in a large pan of boiling water. In a non-stick pan, dry-fry the shallot, turkey, asparagus and garlic for 2-3 minutes.
- Add the passata and redcurrant jelly and bring to a gentle simmer.
- Strain the pasta and rinse well with boiling water. Pour into serving bowls and spoon the sauce on top.
Tips
Rinse the pasta with boiling water after draining to remove the starches from the pasta.
