Ingredients
- 200g (dry weight) pasta shapes
- 1 vegetable stock cube
- 3 baby leeks (240g total), finely sliced
- 2 garlic cloves, crushed
- 200g button mushrooms
- a few chilli flakes
- 200g Philadelphia Extra Light soft cheese
- 100ml semi-skimmed milk
- 1 tbsp chopped fresh basil
- salt and freshly ground black pepper
- olive oil spray
Cooking Instructions
- Cook the pasta in a pan of boiling water containing the stock cube.
- Preheat a non-stick pan, then dry-fry the leeks, garlic and mushrooms for 2-3 minutes in a little olive oil spray, taking care not to burn the garlic.
- Add the chilli flakes and cheese, then season with salt and black pepper and cook for 8-10 minutes, adding enough milk to make a coating sauce. Finally, stir in the coriander.
- Drain the pasta well, return it to the pan, then add the sauce and toss well. Serve straight away with a small salad.
