Garlic Mushroom Pasta

Ingredients

  • 200g (dry weight) pasta shapes
  • 1 vegetable stock cube
  • 3 baby leeks (240g total), finely sliced
  • 2 garlic cloves, crushed
  • 200g button mushrooms
  • a few chilli flakes
  • 200g Philadelphia Extra Light soft cheese
  • 100ml semi-skimmed milk
  • 1 tbsp chopped fresh basil
  • salt and freshly ground black pepper
  • olive oil spray

Cooking Instructions

  1. Cook the pasta in a pan of boiling water containing the stock cube.
  2. Preheat a non-stick pan, then dry-fry the leeks, garlic and mushrooms for 2-3 minutes in a little olive oil spray, taking care not to burn the garlic.
  3. Add the chilli flakes and cheese, then season with salt and black pepper and cook for 8-10 minutes, adding enough milk to make a coating sauce. Finally, stir in the coriander.
  4. Drain the pasta well, return it to the pan, then add the sauce and toss well. Serve straight away with a small salad.
