Ingredients
- 1 small leek, finely chopped
- 2 garlic cloves, chopped
- 200g chestnut mushrooms, sliced
- 20 large uncooked prawns
- 1 x 500g packet tomato passata
- zest and juice of 1 lime
- 1 tbsp chopped fresh chives
- salt and freshly ground black pepper
Cooking Instructions
- Preheat a non-stick wok or frying pan. Add the leek and garlic and dry-fry for 3-4 minutes, or until soft without colour.
- Add the mushrooms and prawns and as the prawns start to colour, pour in the passata and add the lime and chives. Bring the sauce to the boil, then check the prawns are cooked and season with black pepper.
- Serve immediately with 1 blue Portion Pot (55g uncooked weight) boiled basmati rice per person and unlimited steamed green vegetables.
Tips
If using frozen prawns, defrost them overnight in the fridge.
