Gammon and Sage Chicken

This is a really tasty one pot low fat roast chicken recipe. Adding chopped gammon to the mix with sage, garlic and honey keeps the roast really moist and flavoursome. Roasting the swede in the same dish means you can whack everything in one dish and get on with doing something else.

Gammon and sage chicken

Ingredients

  • 4 chicken thighs, skin removed
  • 1 gammon steak, chopped
  • 2 red onions, finely diced
  • 2 garlic cloves, crushed
  • 200g swede, peeled and diced
  • 1 tbsp soy sauce
  • 1 tbsp runny honey
  • 150ml chicken stock
  • 1 tbsp tomato puree
  • 1 tbsp chopped fresh sage
  • salt and freshly ground black pepper

Cooking Instructions

  1. Preheat the oven to 200C, 400F, Gas Mark 6.
  2. Place all the ingredients in a large bowl and mix well. Transfer to a roasting tray and cook in the oven for 30-35 minutes until the chicken is cooked through.
  3. Serve with lightly steamed greeens and mashed potatoes.
