Ingredients
- 2 gammon steaks
- 300g sweet potatoes, peeled
- 1 vegetable stock cube
- 2 eggs
Cooking Instructions
- Preheat the oven to 200C, 400F, Gas Mark 6. Trim away all visible fat from the gammon steaks.
- Cut the sweet potatoes into chips and add to a pan of boiling water along with the vegetable stock cube. Cook for 5 minutes, then drain well and place on a non-stick baking tray.
- Bake near the top of the oven for 20 minutes until cooked.
- About 8-10 minutes before the chips are ready, grill or griddle the gammon steaks for 3-4 minutes on each side.
- In a preheated non-stick pan, dry-fry the eggs.
- Serve each gammon steak topped with an egg, alongside the chips and a few peas.
Tips
Adding a vegetable stock cube to the potato water avoids the need to add salt.
