Five spice chicken

Ingredients

  • 4 x 100g skinless chicken breasts
  • salt and freshly ground black pepper
  • For the marinade
  • 2 tbsps Worcestershire sauce
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 tsp fenugreek
  • 1 tsp ground cumin
  • 2 tbsps runny honey
  • 1 x 2cm piece ginger, peeled and chopped
  • zest and juice of 1 lime

Cooking Instructions

  1. Season the chicken breasts with salt and black pepper and place in the bottom of an ovenproof dish.
  2. Combine the marinade ingredients in a mixing bowl, then pour over the chicken. Leave the chicken to marinate for at least 1 hour.
  3. Preheat the oven to 200C, 400F, Gas Mark 6 or preheat a barbecue.
  4. Place the chicken, still in its dish, in the oven, or remove from the dish and place on the barbecue grill, and bake or grill for 25-30 minutes until fully cooked.
  5. When the chicken is cooked through, serve hot with 1 red portion pot cooked boiled basmati rice per person plus salad.

Tips

To enhance the flavour of the chicken, leave it to marinate overnight on the refrigerator.
