Ingredients
- 4 x 100g skinless chicken breasts
- salt and freshly ground black pepper
- For the marinade
- 2 tbsps Worcestershire sauce
- 1 tsp ground coriander
- 1 tsp paprika
- 1 tsp fenugreek
- 1 tsp ground cumin
- 2 tbsps runny honey
- 1 x 2cm piece ginger, peeled and chopped
- zest and juice of 1 lime
Cooking Instructions
- Season the chicken breasts with salt and black pepper and place in the bottom of an ovenproof dish.
- Combine the marinade ingredients in a mixing bowl, then pour over the chicken. Leave the chicken to marinate for at least 1 hour.
- Preheat the oven to 200C, 400F, Gas Mark 6 or preheat a barbecue.
- Place the chicken, still in its dish, in the oven, or remove from the dish and place on the barbecue grill, and bake or grill for 25-30 minutes until fully cooked.
- When the chicken is cooked through, serve hot with 1 red portion pot cooked boiled basmati rice per person plus salad.
Tips
To enhance the flavour of the chicken, leave it to marinate overnight on the refrigerator.
