Ingredients

  • 400g cooked chicken breasts
  • 1 courgette, grated
  • 1 red chilli, finely chopped
  • zest and juice of a lime
  • 150ml elderflower cordial
  • 3 tsps white balsamic condiment
  • 1 tbsp freshly chopped basil
  • 1 tsp Dijon mustard
  • salad leaves to serve
  • 4 spring onions, chopped
  • 1 green pepper, deseeded and chopped
  • salt and freshly ground black pepper
  • fresh raspberries to garnish

Cooking Instructions

  1. 1 Remove any skin from the chicken pieces and place in a non-metallic bowl. Cover with the grated courgette, chilli and lime zest, seasoning with salt and black pepper.
  2. 2 In a separate bowl, mix together the remaining marinade ingredients and pour over the chicken. Allow to marinate for 30 minutes.
  3. 3 Prepare a salad base of lettuce, spring onions and peppers.
  4. 4 Place the salad in serving bowls and put the chicken on top. Drizzle with marinade and serve, garnished with fresh raspberries.

Tips

Use this simple marinade for both raw and cooked meats.
