Curried meatloaf with mushroom gravy

Ingredients
- 200g lean minced beef
- 200g lean minced pork
- 50g fresh breadcrumbs
- 2 tbsp fresh sage, chopped
- 1 red onion, finely chopped
- 2 garlic cloves, crushed
- 2 carrots, grated
- salt and black pepper
- 1 red onion, finely diced
- 1 tsp runny honey
- 200g chestnut mushrooms, finely diced
- 300ml water
- 2-3 tsps gravy powder
- 1 tbsp finely chopped chives
Cooking Instructions
- In a large bowl, mix together 200g lean minced beef, 200g lean minced pork, 50g fresh breadcrumbs, 2 tbsps chopped fresh sage, 1 finely chopped medium red onion, 2 crushed garlic cloves and 2 grated carrots.
- Season with salt and black pepper and then press the mixture into a small loaf tin or 6 individual ramekins and place in a roasting tin.
- Pour in sufficient water to come halfway up the sides of the loaf tin or ramekins. Cover with foil and bake in a preheated oven at 190C, 375F, Gas Mark 5 for 1 hour.
- Meanwhile In a preheated non-stick pan over a moderate heat, dry-fry 1 finely diced red onion with 1 tsp runny honey until the onion starts to brown.
- Stir in 200g finely diced chestnut mushrooms, cook until soft and then add 300ml water. Mix 2-3 tsps gravy powder with a little cold water and stir into the pan.
- Simmer gently to allow the gravy to thicken, then stir in 1 tbsp finely chopped chives.
- Turn the meatloaf out onto a serving plate and pour the gravy over the top. Serve with potatoes and a selection of fresh vegetables.
