Curried Meatloaf with Mushroom Gravy

This is a delicious low-fat meatloaf recipe with a spicy Indian twist. Meatloaf is the perfect comfort food served hot and is also lovely served cold as leftovers or in sandwiches. This low-fat recipe is just 193 calories and 3.6% fat. Leave out the curry powder if you prefer yours plain.

Curried meatloaf with mushroom gravy

Ingredients

  • 200g lean minced beef
  • 200g lean minced pork
  • 50g fresh breadcrumbs
  • 2 tbsp fresh sage, chopped
  • 1 red onion, finely chopped
  • 2 garlic cloves, crushed
  • 2 carrots, grated
  • salt and black pepper
  • 1 red onion, finely diced
  • 1 tsp runny honey
  • 200g chestnut mushrooms, finely diced
  • 300ml water
  • 2-3 tsps gravy powder
  • 1 tbsp finely chopped chives

Cooking Instructions

  1. In a large bowl, mix together 200g lean minced beef, 200g lean minced pork, 50g fresh breadcrumbs, 2 tbsps chopped fresh sage, 1 finely chopped medium red onion, 2 crushed garlic cloves and 2 grated carrots.
  2. Season with salt and black pepper and then press the mixture into a small loaf tin or 6 individual ramekins and place in a roasting tin.
  3. Pour in sufficient water to come halfway up the sides of the loaf tin or ramekins. Cover with foil and bake in a preheated oven at 190C, 375F, Gas Mark 5 for 1 hour.
  4. Meanwhile In a preheated non-stick pan over a moderate heat, dry-fry 1 finely diced red onion with 1 tsp runny honey until the onion starts to brown.
  5. Stir in 200g finely diced chestnut mushrooms, cook until soft and then add 300ml water. Mix 2-3 tsps gravy powder with a little cold water and stir into the pan.
  6. Simmer gently to allow the gravy to thicken, then stir in 1 tbsp finely chopped chives.
  7. Turn the meatloaf out onto a serving plate and pour the gravy over the top. Serve with potatoes and a selection of fresh vegetables.
