Ingredients

  • 1 large red onion, finely diced
  • 2 garlic cloves, crushed
  • 300g extra lean minced beef
  • 1 tbsp chopped fresh thyme
  • 1 beef stock cube
  • 1 red pepper, deseeded and finely sliced
  • 1 x 400g can chopped tomatoes
  • 1 small red chilli, sliced
  • 1 x 400g can kidney beans
  • 500g tomato passata
  • 1 tbsp tomato puree
  • 20g 70% dark chocolate, chopped

Cooking Instructions

  1. Heat a non-stick frying pan and dry-fry the onion and garlic until soft.
  2. Add the minced beef and chopped thyme and continue cooking for 5 minutes to brown the mince.
  3. Sprinkle the stock cube over the mince, then add the red pepper, chopped tomatoes, chilli, kidney beans, passata and tomato puree. Simmer gently for 25 minutes until the sauce has thickened and the beef is tender.
  4. Just before serving, stir in the chocolate. Serve straight away with boiled brown basmati rice.
